Father’s Day is upon us and the stress of trying to find Dad the perfect, all-encompassing gift is sure to be in the back of your mind. But not to worry – we have some ideas to help you out. According to a poll done in the U.S., 86% of Dads would prefer the delicious and juicy gift of red meat over a tie, the classic last-minute gift for Dad. After all, Father’s Day is about giving Dad the opportunity to relax and feel appreciated for all that he does, and what better way to do that than to cook a delicious & meaty meal for him!

1. Pork Back Ribs

These home smoked Ribeye and Striploin Cold Smoked Steaks are also a great idea for grilling up on Father’s Day. If you’re curious to see how these meats are best cooked, we sat down with Master Butcher Bob and Chef Lance to find out how to best prepare them for Dad!

So… what is a Cold Smoked Steak?
“Most smoked products, like bacon and hams, are smoked using heat so that the flavors and aromas of the wood used are absorbed by the meat being smoked,” says Master Butcher Bob. “Cold smoking is doing just this, but without the use of heat.”  At Urban Butcher, the Cold Smoked Steaks are raw and spiced with our own spice mixture which contains absolutely no salt, MSG, or gluten. The steaks are not brined in any salt or sugar solution, but are instead marinated.

How should I best cook a Cold Smoked Steak?
“A cold smoked steak has just been marinated and then smoked for a short period of time,” says Chef Lance.“ This allows you to reap the benefits of a wood-smoked meat, which packs a smoky punch full of flavor. That being said, you should ultimately treat a Cold Smoked Steak just like you would a regular steak!”

Chef Tip: The key to cooking a perfect steak is to pull it out of the fridge 15-20 minutes before grilling – this will ensure the meat is the same temperature throughout and will maintain consistency when cooking. Also make sure the grill is hot before cooking the steak, and try not to flip it more than 4 times. Lastly, let the steaks rest for around 5-10 minutes… this allows the meat to relax and re-absorb all the delicious juices.

Looking for something delicious to whip up to go alongside your meaty dinner for Dad?


Try Chef Lance’s favorite Potato Salad Recipe:

1/2 kg of Fingerling potato
1/2 cup Sour cream
2 tbsp sherry vinegar
1 tbsp walnut oil
1 tsp grainy mustard
1/2 cup scallions small diced
1/2 cup celery small diced
1/4 cup red radish sliced
1/4 cup fresh dill
1 tbsp olive oil
6 hardboiled eggs

Method : Cook potatoes with slated cold water, bring to a boil and simmer until you can easily insert a knife into the center of the potato. Cool and cut into 4 pieces. Whisk together sour cream, sherry vinegar, walnut oil, mustard and olive oil. Fold gently with the potatoes and top with scallions, celery and dill.
