Elk meat can be substituted for beef in most recipes with a few changes. Since elk is so low in fat use care to ensure the meat is not overcooked. We recommend cooking elk to a state of rare or medium-rare to ensure maximum tenderness. Our elk meat is raised without the use of hormones or antibiotics and is supplied by the Canadian Rocky Mountain Ranch.
