Elk meat can be substituted for beef in most recipes with a few changes. Since elk is so low in fat use care to ensure the meat is not overcooked. We recommend cooking elk to a state of rare or medium-rare to ensure maximum tenderness. Our elk meat is raised without the use of hormones or antibiotics and is supplied by the Canadian Rocky Mountain Ranch.

For best results, sear it at very high temperature to seal-in natural juices and fat. Then move it to lower heat then continue cooking. Raised without the use of added hormones or steroids and no antibiotics. Cut approximately 1 inch thick.
