Bison Tenderloin Steak
The most tender of all bison cuts, this Alberta natural bison tenderloin is prized for its delicate texture and minimal fat marbling. For best results, remove from the fridge and allow to stand at room temperature for one hour, then pan-sear and finish in a low-heat oven. Best enjoyed rare to medium-rare for maximum tenderness. Raised without hormones or antibiotics and cut approximately 1 inch thick.
