Lower in fat and cholesterol than beef and even chicken, elk top sirloin should be cooked to a state of rare or medium-rare to ensure maximum tenderness. Our elk meat is raised without the use of hormones or antibiotics and is supplied by the Canadian Rocky Mountain Ranch.
