Remove from fridge, allow the tenderloin to stand at room temperature for one hour. We suggest pan searing first then finishing in a low heat oven for the best results. We recommend cooking bison to a state of rare or medium-rare to ensure maximum tenderness. Our bison is raised without the use of hormones or antibiotics and is cut approximately 1 inch thick.
